Poached Salmon With Redwine Butter

Ingredients

  • 3 lbs. boneless and skinless salmon filet
  • 1/2 pound butter, cut into pcs
  • 1 c. red wine
  • 2 shallots, minced
  • 2 tbsp. red wine vinegar
  • Juice of 1 lemon
  • 1/2 c. cream
  • 1/3 c. minced basil
  • Salt and pepper to taste

Directions

  1. Cut the salmon filet into 8 pcs. Poach in water for 5 min. while the salmon is cooking, prepare the sauce. In a saucepan, add in the red wine, shallots and vinegar. Bring to a boil. Reduce to almost 1/4 of its volume and add in the cream. Bring to a boil for a few seconds. Whip in the butter piece by piece till the sauce is smooth. Add in lemon juice and minced basil. Adjust seasoning. Pour into a sauce boat.
