Poached Salmon Steak

Ingredients

  • 2 tbsp. butter
  • 1/3 c. minced onions
  • 1/3 c. minced carrots
  • 1/3 c. minced celery
  • 4 c. water
  • 1/2 c. dry white wine or possibly 1/4 c. vinegar
  • Salt to taste
  • Peppercorns to taste
  • Salmon steaks

Directions

  1. In large skillet, heat butter, add in vegetables and cook 5 min. Add in water, wine and seasonings and simmer 5 min.
  2. Place salmon in boiling liquid, but do not completely cover steaks. Lower heat and cover skillet. Simmer gently 5 min per lb.. Remove and serve with dill sauce.
