Ingredients

  • ½ cup packed light-brown sugar
  • ½ cup granulated sugar
  • 4 tablespoons fresh lemon juice
  • 1 cup dark rum, such as Myers's
  • 4 tablespoons heavy cream
  • 2 large cans of pineapple rings, drained (reserve juice for another use)
  • 2 teaspoons vanilla extract
  • 1 large egg yolk
  • Tart Dough
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • ¾ teaspoon salt
  • 8 ounces (2 sticks) cold unsalted butter, cut into ½-inch pieces
  • ¼ cup ice water
