Ingredients

  • Jalapenos - ½lb. (about 8), stems removed and cut into ¼" slices
  • Carrots - 2 medium, cut into ¼" rounds
  • Apple Cider Vinegar - 1½cups (reduce to 1cup if you don't like them too acidic)
  • Bay leaves - 2
  • Sugar - 1tsp
  • Whole Peppercorns - ¼tsp
  • Coarse Salt - 2tsp
