%3C/p%3E%3Cp%3EWhen%20I%20went%20out%20this%20morning%20and%20found%20the%20half-eaten%20remains%20of%20another%20of%20our%20biggest%20nearly%20ripe%20tomatoes,%20I%20felt%20something%20had%20to%20be%20done.%20I%20turned%20to%20my%20community%20on%20Facebook%20for%20suggestions%20on%20how%20to%20solve%20this%20problem.%20Suggestions%20included%20spreading%20red%20pepper%20flakes%20around,%20picking%20the%20tomatoes%20while%20green,%20pursuing%20thermonuclear%20options,%20and%20eating%20the%20chipmunks,%20themselves.%3C/p%3E%3Cp%3EI%20was%20intrigued%20by%20the%20idea%20of%20picking%20the%20green%20tomatoes%20as%20it%20seemed%20the%20most%20fool-proof%20(and%20I%20have%20no%20taste%20for%20chipmunk%20meat)%20but%20also%20knew%20I%20would%20not%20be%20frying%20them%20all%20up%20since%20my%20husband%20and%20son%20both%20actively%20dislike%20tomatoes%20unless%20they're%20in%20sauce%20form%20or%20dried.%20And%20this%20baby%20is%20taking%20up%20waaaay%20too%20much%20room%20in%20my%20innards%20to%20allow%20me%20to%20eat%20more%20than%20a%20single%20fried%20green%20tomato%20in%20one%20sitting.%3C/p%3E%3Cp%3ESo%20I%20called%20on%20my%20three-year-old%20to%20help%20me%20pick%20all%20the%20large%20green%20tomatoes%20-%20a%20task%20he%20agreed%20to%20with%20great%20gusto%20since%20he%20spends%20a%20lot%20of%20his%20time%20picking%20everything%20in%20the%20garden,%20regardless%20of%20ripeness,%20anyway.%20We%20gathered%20up%20roughly%20two%20and%20a%20half%20pounds%20of%20green%20beauties%20and%20I%20carried%20them%20inside,%20using%20my%20extra%20stretchy%20maternity%20tank%20top%20as%20a%20make-shift%20basket%20(hurray%20for%20ruching!%20I'm%20not%20sure%20I%20can%20ever%20return%20to%20normal%20clothing...)%3C/p%3E%3Cp%3EThe%20rest%20was%20really%20very%20easy.%20Washed%20the%20tomatoes.%20Sliced%20them.%3C/p%3E%3Cp%3EBoiled%20some%20water%20and%20sterilized%20some%20jars.%20Peeled%20some%20garlic.%20Heated%20up%20some%20brine.%20Measured%20out%20some%20spices.%20Packed%20the%20tomatoes%20in.%3C/p%3E%3Cp%3EPoured%20some%20brine.%20Added%20lids%20and%20bands%20and%20boiled%20them%20for%20all%20of%2010%20minutes.%20There%20was%20one%20moment%20of%20(minor)%20tragedy%20in%20which%20one%20of%20my%20pint%20jars%20cracked%20in%20half%20about%205%20seconds%20after%20I%20immersed%20it%20in%20boiling%20water%20but%20otherwise%20it%20was%20smooth%20sailing.%3C/p%3E%3Cp%3EIn%20your%20face,%20chipmunks!!!%20(please%20imagine%20this%20delivered%20in%20a%20Homer%20Simpson%20voice.)%20Of%20course,%20now%20the%20cute%20little%20bastards%20will%20probably%20start%20in%20on%20our%20cucumbers...%3C/p%3E%3Cp%3EMakes%203%20pint%20jars%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E*%203%20bay%20leaves%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Prepare%20a%20boiling%20water%20bath%20and%20sterilize%204%20(just%20to%20be%20safe)%20pint%20jars.%20Place%20the%20lids%20in%20a%20small%20sauce%20pan,%20cover%20them%20with%20water%20and%20simmer%20over%20low%20heat.%3C/p%3E%3Cp%3E2.%20Combine%20the%20vinegar,%20water%20and%20salt%20in%20a%20small%20pot%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3E3.%20Remove%20your%20sterilized%20jars%20to%20a%20towel%20lined%20counter%20top%20next%20to%20the%20stove.%20Place%20the%20following%20into%20the%20bottom%20of%20each%20hot,%20ready-for-canning%20jar:%3C/p%3E%3Cp%3E-1%20teaspoon%20dill%20seed%3C/p%3E%3Cp%3E-2%20garlic%20cloves%3C/p%3E%3Cp%3E-1/4%20teaspoon%20peppercorn%3C/p%3E%3Cp%3E-1%20bay%20leaf%3C/p%3E%3Cp%3E4.%20Pack%20the%20green%20tomato%20wedges%20into%20the%20jars%20-%20wedge%20them%20in%20there%20as%20best%20you%20can%20without%20mangling%20them.%20Pour%20the%20brine%20slowly%20into%20the%20jars,%20leaving%201/2%22%20headspace.%20Use%20a%20wooden%20chopstick%20to%20remove%20the%20air%20bubbles%20and%20add%20a%20bit%20of%20additional%20brine%20if%20necessary.%20Wipe%20rims,%20apply%20simmered%20lids%20and%20screw%20on%20bands.%3C/p%3E%3Cp%3E5.%20Process%20in%20a%20boiling%20water%20canner%20for%2010%20minutes.%20When%20time%20is%20up,%20remove%20the%20jars%20from%20the%20canner%20and%20let%20them%20cool%20on%20a%20towel-lined%20counter%20top.%20When%20jars%20are%20completely%20cool,%20remove%20rings%20and%20test%20seals%20by%20grasping%20the%20edges%20of%20the%20lid%20and%20lifting%20the%20jar.%20If%20the%20lids%20hold%20fast,%20the%20seal%20is%20good.%3C/p%3E%3Cp%3E6.%20Wait%20at%20least%20one%20week%20before%20eating%20to%20allow%20time%20to%20cure.%20Store%20in%20a%20cool,%20dark%20place%20for%20up%20to%20one%20year.%3C/p%3E){kind=link}
