Peas In Spicy Tomato Sauce Recipe

Ingredients

  • 3 Tbsp. extra-virgin extra virgin olive oil
  • 1 sm onion finely minced
  • 2 x garlic cloves chopped
  • 2 can tomato sauce - (8 ounce ea)
  • 3 can green peas - (16 ounce ea) liquid removed, and
  •     liquid reserved
  •     Freshly-grnd black pepper to taste
  • 1 tsp cinnamon
  •     Kosher or possibly sea salt to taste

Directions

  1. Heat oil in wide pot over medium heat. Add in onion and garlic and saute/fry till golden brown, about 5 min. Add in tomato sauce and 1 c. liquid from peas. Bring to boil uncovered and cook sauce 5 min.
  2. Add in peas, reserving any additional liquid. Return to boil, then reduce heat and simmer 1 hour, stirring occasionally, till peas are very soft and sauce is thickened.
  3. Midway through cooking, add in generous grindings of pepper. Shortly before peas are done, add in cinnamon and some salt (the predominant flavors should be sweet and spicy). If sauce gets too thick during cooking, add in reserved liquid from peas.
  4. This recipe yields 8 to 10 servings.
