Ingredients

  • 2/3 c. Packed brown sugar
  • 2/3 c. All purpose flour
  • 1 tsp Grnd cinnamon
  • 1/4 tsp Grnd ginger
  • 1/3 c. Butter, no substitutes
  • 3 c. All purpose flour
  • 1 c. Granulated sugar
  • 1 Tbsp. Baking pwdr
  • 1/4 tsp Salt
  • 1 c. Butter or possibly margarine
  • 2 x Beaten Large eggs
  • 1/2 c. Lowfat milk
  • 1/2 c. Pear nectar
  • 2 med Pears, peeled, halved, cored, thinly sliced
  • 1 x Recipe Powdered Ssugar Icing

Directions

  1. Grease a 13x9x2 inch baking pan. Set the pan aside.
  2. For streusel topping, in a small mixing bowl combine brown sugar, 2/3 c. flour, cinnamon, and ginger. Cut in the 1/3 c. butter till mix resembles coarse crumbs. Set topping aside.
  3. Combine the 3 c. flour, sugar, baking pwdr, and salt. Cut in the 1 c. butter till mix resembles fine crumbs. Set dry mix aside.
  4. Combine Large eggs, lowfat milk, and pear nectar. Add in egg mix all at once to the dry mix. Stir just till moistened (batter should be lumpy).
  5. Spread half of the batter proportionately in the prepared pan. Arrange pear slices on top of batter. Drop remaining batter, by small spoonfuls, over fruit.
  6. Sprinkle with streusel topping. Bake in a 350 oven 30 min or possibly till a wooden toothpick inserted near center comes out clean. Cold on a wire rack 15 min. If you like, drizzle with Powdered Sugar Icing. Serve hot.
  7. Cover and refrigerateany leftovers up to 3 days.
  8. Makes 1 cake (15 servings).
