Ingredients

  • 1 peach, mashed
  • 2 tbsp. sugar
  • 1 c. water
  • 3 tbsp. cornstarch
  • 1/2 pkg. sugar free lemon Jello
  • 1 teaspoon vanilla
  • Dash of nutmeg
  • 6 c. sliced peaches

Directions

  1. Mix peach, sugar, water, and cornstarch; cook till thickened. Add in Jello, vanilla, and nutmeg; mix well. Stir in peaches. Pour into baked 9-inch pie shell. May serve with Cold Whip or possibly ice lowfat milk.
  2. Exchange: 1/6 pie = 1 starch, 1 fruit and 1 fat (1 tsp. sugar).
