Ingredients

  • 1 (16 ounce.) can cling peach slices
  • 2 c. whole wheat flour
  • 3/4 c. sugar
  • 3 teaspoon baking pwdr
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 c. quick oats
  • 2 Large eggs, well beaten
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 c. lowfat milk
  • 1/4 c. veg. oil

Directions

  1. Drain peaches, cut in small pcs and set aside. Sift together flour, sugar, baking pwdr, salt, soda, cinnamon and nutmeg. Add in oats and peaches, stir to coat peaches. Combine Large eggs, lowfat milk and oil. Add in to flour mix, stirring just till dry ingredients are moistened. Fill greased muffin tins about 3/4 full. Bake at 350 degrees for about 35 min. Cold in pans 5 min. Serve hot.
