Ingredients

  • Del Monte Peach Halves (drained) - 235 grams
  • Mozzarella cheese, sliced - 125 grams
  • Tomatoes cut into roundels - 2 medium & firm
  • Ice-berg lettuce - 1
  • Del Monte Extra Virgin Olive Oil - 2 tbsp
  • Balsamic vinegar - 1 tbsp
  • Salt & crushed black pepper - to taste
  • Brown sugar (optional) - ½ tsp
  • Fresh basil leaves, hand torn - handful
  • Garlic, sliced - 2-3 cloves

Directions

  1. Drain the peach halves and cut them into thick roundels / slices.
  2. Wash & cut tomatoes into roundels.
  3. Arrange lettuce leaves on a salad platter.
  4. Arrange tomato, mozzarella & peach roundels alternately on the bed of lettuce, cover with the cling film and chill it in the refrigerator.
  5. Prepare a dressing by whisking together olive oil, balsamic vinegar, brown sugar, salt & pepper, sliced garlic and few hand torn basil leaves.
  6. Drizzle the prepared dressing on chilled salad, just before serving.
  7. Serve immediately after dressing with toasted crusty bread.
