Ingredients

  • 2 c. oat bran
  • 1/4 c. firmly packed brown sugar
  • 2 teaspoon baking pwdr
  • 1 c. skim lowfat milk
  • 2 egg whites
  • 1/4 c. honey
  • 1/2 T vegetable oil
  • 1/2 c. raisins
  • 1/2 c. walnuts
  • 1 c. minced apple
  • 1/2 T cinnamon

Directions

  1. Heat oven to 425 degrees. Line 12 muffin cups with paper baking cups or possibly spray bottoms with cooking spray. Put together dry ingredients. Add in lowfat milk, egg whites, honey and oil; mix just till dry ingredients are moistened. Add in fruit and nuts. Fill muffin cups almost full; bake about 20 min or possibly till golden. Muffins can be securely wrapped and frzn for up to 3 months. Frzn muffin can be reheated in microwave at High for 25 to 30 seconds for each muffin.
