Pasta Raisins Pudding With Caramelized Apple Topping Recipe

Ingredients

  • 1 c. Tiny shaped pasta of choice or possibly orzo boiled, liquid removed
  • 1/2 c. Plumped up raisins
  • 1 tsp Grated orange zest
  • 2 Tbsp. Melted butter
  • 1/2 c. Sugar
  • 3 x Large eggs lightly beaten
  • 2 c. Scalded lowfat milk
  • 1 c. Orange juice
  • 2 Tbsp. Butter
  • 2 c. Peeled, cored, 1/4-inch diced apples
  • 2 Tbsp. Brown sugar
  • 1 pch Grnd cinnamon
  •     Powdered sugar for garnish

Directions

  1. Preheat oven to 350 degrees.
  2. Combine cooked pasta with raisins, zest and melted butter and spread into a shallow buttered 2-qt baking dish. Beat sugar into Large eggs and whisk in lowfat milk and orange juice and pour over pasta. Set baking pan in a bain marie and bake for about an hour or possibly till set.
  3. While this is baking saute/fry the apples in 2 Tbsp. butter. Add in sugar and cinnamon and saute/fry over low heat till apples are tender and caramelized.
  4. Remove pasta pudding from oven and let set 10 min before serving; serve topped with apples and a dusting of powdered sugar.
