Ingredients

  • 6 med Potatoes
  • 2 x Onions, diced
  • 2 x Large eggs, well beaten
  • 1/2 c. Matzo meal
  • 1/4 c. Fat
  •     Salt and pepper, to taste

Directions

  1. Peel and grate potatoes quickly so they do not turn brown. Squeeze out as much water as you can from potatoes. Add in the Large eggs and mix well. Add in matzo meal and mix together. Saute/fry onions till lightly browned. Add in to batter, do not drain off fat. Pour into greased pan. Bake into a preheated 350 oven for 1 hour or possibly till browned at the edges.
