%20New%20Year%20is%20coming%20up%20very%20soon!%20For%20me,%20that%20means%20heading%20over%20to%20Malaysia%20to%20celebrate%20with%20my%20dad's%20side%20of%20the%20family.%20CNY%20is%20another%20holiday%20that%20demands%20continuous%20days%20of%20overeating%20and%20overindulgence%20(which%20is%20why%20any%20new%20year%20resolutions%20that%20go%20along%20the%20lines%20of%20eat%20healthy%20doesn't%20work%20at%20all%20for%20me)%20and%20lots%20and%20lots%20of%20cookies.%20Cookies%20of%20which%20I%20will%20share%20very%20soon,%20but%20before%20that,%20I%20thought%20I'd%20contribute%20a%20little%20taste%20of%20my%20cultural%20heritage.%3C/p%3E%3Cp%3EThis%20swiss%20roll%20is%20composed%20of%20two%20main%20flavors:%20pandan%20and%20kaya,%20both%20of%20which%20are%20Malaysian%20favorites.%20You%20should%20be%20able%20to%20find%20both%20at%20your%20nearest%20Asian%20grocery%20store.%20Pandan%20leaves%20are%20actually%20used%20quite%20frequently%20in%20Southeast%20Asian%20cuisines,%20often%20in%20its%20original%20leaf-form%20to%20infuse%20a%20subtle%20flavor.%20The%20kaya%20jam%20actually%20has%20pandan%20in%20it,%20but%20it's%20mainly%20a%20sweet%20concoction%20of%20coconut%20and%20eggs%20-%20you%20can't%20tell%20me%20that%20doesn't%20sound%20good.%3C/p%3E%3Cp%3EIf%20you've%20never%20tried%20pandan,%20I'm%20not%20sure%20how%20to%20describe%20its%20flavors%20to%20you%20-%20it's%20sweet,%20fresh%20and%20a%20little%20herb-like.%20%20Its%20flavor%20is%20unmistakably%20Southeast%20Asia.%20As%20for%20kaya,%20if%20this%20venture%20seems%20a%20bit%20too%20out%20there%20for%20you,%20kaya%20butter%20toast%20is%20one%20of%20my%20all-time%20favorite%20things%20to%20eat.%3C/p%3E%3Cp%3EPandan%20and%20kaya%20goes%20together%20like%20salt%20and%20pepper,%20bread%20and%20butter,%20coffee%20and%20biscotti,%20Ross%20and%20Rachel...%20you%20get%20the%20idea.%20If%20you've%20never%20tried%20either%20of%20these%20flavors%20before%20it%20would%20probably%20taste%20a%20little%20unusual%20to%20you,%20but%20I%20swear%20you'll%20like%20it%20after%20another%20bite.%20And%20then%20another.%20And%20one%20more.%20And%20before%20you%20know%20it,%20it's%20all%20gone.%3C/p%3E%3Cp%3EPandan%20&%20Kaya%20Swiss%20Roll%3C/p%3E%3Cp%3EMakes%201%20roll%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20356F/180C.%20Line%20a%209%22%20x%2012%22%20rectangular%20pan%20with%20parchment%20paper%20and%20set%20aside%20(lamington%20tin%20works%20just%20fine).%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20using%20an%20electric%20beater,%20beat%20eggs%20and%20sugar%20together%20on%20high%20speed%20for%20about%207%20minutes,%20or%20until%20the%20batter%20is%20pale%20and%20doubled%20in%20volume.%20When%20you%20lift%20the%20whisk%20out,%20the%20batter%20should%20fall%20back%20in%20ribbons.%20Continue%20to%20beat%20for%20another%202%20minutes%20on%20low%20speed.%3C/p%3E%3Cp%3ESift%20in%20a%20third%20of%20the%20flour%20and%20fold%20into%20the%20batter%20gently.%20Repeat%20with%20the%20remaining%20two%20thirds%20of%20flour,%20taking%20care%20not%20to%20deflate%20the%20batter.%3C/p%3E%3Cp%3EFold%20in%20the%20butter%20and%20pandan%20extract.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20pan%20and%20smooth%20it%20out%20evenly%20-%20it%20may%20look%20like%20there's%20not%20enough%20but%20don't%20worry,%20it'll%20work%20out,%20just%20smooth%20it%20out%20the%20best%20you%20can.%20Bake%20for%2010-15%20minutes%20or%20until%20the%20surface%20is%20brown%20and%20a%20toothpick%20comes%20out%20clean.%20Be%20sure%20not%20to%20overbake%20as%20that%20will%20increase%20your%20chances%20of%20cracks%20when%20rolling.%3C/p%3E%3Cp%3ERemove%20the%20sponge%20cake%20from%20the%20pan.%20Either%20sift%20icing%20sugar%20over%20a%20teatowel%20or%20line%20it%20with%20parchment%20paper,%20then%20put%20the%20sponge%20cake%20straight%20onto%20the%20lined%20towel%20and%20roll%20it%20up%20as%20tightly%20as%20you%20can,%20and%20leave%20on%20a%20rack%20to%20cool.%20Alternatively,%20you%20can%20put%20the%20sponge%20cake%20straight%20from%20the%20oven%20into%20an%20airtight%20plastic%20bag%20or%20cover%20the%20tray%20with%20another%20rectangular%20tray%20-%20the%20aim%20is%20just%20to%20retain%20the%20moisture%20so%20that%20it's%20easy%20to%20roll%20later%20on.%3C/p%3E%3Cp%3EOnce%20it's%20cool,%20unroll%20the%20sponge%20and%20spread%20with%20kaya.%20Roll%20it%20back%20up,%20slice%20and%20serve.%3C/p%3E){kind=link}
