Orange Glazed Roasted Beets Recipe

Ingredients

  • 1 1/4 pounds fresh beets
  • 2 T olive oil
  • salt and pepper to taste
  • 2/3 cup orange marmalade
  • 2 T cornstarch
  • 2 T honey
  • 2 T rice vinegar
  • 1/4 t ground cinnamon
  • 1 T orange zest
  • juice from 1 orange
  • Orange, Beets
  • Boil Beets
  • In a large saucepan, cover the beets with lightly salted water
  • Bring to a boil over high heat
  • Lower the heat and simmer, covered for 40 to 45 minutes or until almost tender.
  • Drain, removing the beets
  • Cool slightly
  • Peel by slipping off the skins while still warm, quarter beets
  • Roast Beets
  • Spread beets on a baking sheet
  • Drizzle with olive oil
  • Sprinkle with salt and pepper
  • Roast in a 425º oven for 25-35 minutes
  • Make Orange Glaze
