- Biscotti not quite your cup of tea? I have some other Nutella recipes you might like:
- 2 1/4 cups whole wheat pastry flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs
- 3/4 cup sugar
- 1/2 cup Nutella (OK, mine was really heaping)
- 1/3 cup toffee bits
- 1/4 cup semi-sweet chocolate chips

%20and%20scarecrows%20(July%207)%20deserve%20celebrity%20and%20recognition,%20I%20do;%20think%20of%20the%20value-add.%20But%20National%20Umbrella%20Day?%20Or%20National%20Toothache%20Day?%20Really?%20Coincidentally,%20today%20is%20also%20National%20Weatherman's%20Day.%20In%20addition%20to%20having%20a%20sexist%20name,%20this%20day%20offers%20me%20nothing%20to%20eat,%20so%20I%20scoff.%20Sorry,%20Al%20Roker.%3C/p%3E%3Cp%3EI%20think%20we%20can%20all%20agree,%20however,%20that%20Nutella%20deserves%20to%20be%20revered%20on%20a%20daily%20basis.%20It's%20nutty,%20chocolately%20deliciousness%20is%20equally%20as%20good%20smeared%20on%20your%20morning%20toast%20as%20it%20is%20baked%20into%20a%20gooey%20cookie.%20And%20speaking%20of%20cookies,%20I%20have%20a%20pretty%20wicked%20Nutella%20cookie%20recipe%20on%20this%20site%20and,%20apparently,%20over%2080,000%20of%20you%20agree%20with%20me.%3C/p%3E%3Cp%3EYep,%2080,000.%20Crazypants.%3C/p%3E%3Cp%3ESo%20I'm%20happy%20to%20be%20worshipping%20at%20the%20Nutella%20altar%20today.%3C/p%3E%3Cp%3EI%20toyed%20with%20the%20idea%20of%20trying%20to%20create%20something%20offbeat,%20perhaps%20something%20savory%20for%20this%20World%20Nutella%20Day,%20but%20I%20just%20kept%20coming%20back%20to%20what%20Nutella%20does%20best:%20dessert.%3C/p%3E%3Cp%3ESo%20you're%20getting%20a%20hopefully-equal-to-the-almighty-cookies%20biscotti%20recipe!%3C/p%3E%3Cp%3EI%20love%20biscotti%20--%20pretty%20much%20all%20biscotti,%20be%20they%20crunchy%20on%20the%20outside%20and%20dense%20and%20soft%20on%20the%20inside%20or%20just%20light%20and%20crunchy%20all%20the%20way%20through.%20I've%20made%20them%20cheesy%20and%20savory%20for%20breakfast,%20sweet%20and%20decadent%20for%20dessert%20and,%20perhaps%20my%20favorite,%20only%20slightly%20sweet%20for%20afternoon%20tea.%3C/p%3E%3Cp%3EThis%20biscotti%20recipe%20falls%20into%20the%20last%20category,%20a%20perfect%20cookie%20for%20your%20next%20cup%20of%20afternoon%20tea%20or%20coffee.%20With%20no%20butter%20or%20oil,%20the%20biscotti%20is%20light%20and%20airy,%20and%20really%20lets%20a%20nicely%20subtle%20Nutella%20flavor%20take%20center%20stage%20--%20although%20not%20too%20center,%20because%20there%20are%20also%20lovely%20gooey%20bits%20of%20chocolate%20and%20toffee%20to%20find.%3C/p%3E%3Cp%3EIf%20you've%20made%20biscotti%20before,%20you%20know%20the%20drill:%20form%20the%20logs,%20bake%20a%20bit,%20cut%20into%20slices%20and%20re-bake.%20With%20some%20denser%20biscotti%20recipes,%20you%20may%20omit%20the%20second%20baking%20for%20softer%20cookies,%20but%20you%20really%20cannot%20do%20that%20with%20this%20recipe.%20The%20biscotti%20will%20still%20be%20a%20bit%20too%20soft%20and%20you'll%20miss%20the%20crunchy%20airiness.%3C/p%3E%3Cp%3EAlso,%20be%20sure%20to%20use%20a%20large%20baking%20sheet%20and%20give%20the%20logs%20ample%20room%20on%20either%20side:%20the%20dough%20will%20spread%20quite%20a%20bit.%20Which%20is%20nice,%20because%20you%20end%20up%20with%20big%20pieces%20of%20biscotti,%20similar%20in%20size%20to%20the%20fancy-shmancy%20ones%20you%20buy%20in%20coffee%20shops.%3C/p%3E%3Cp%3EBiscotti%20not%20quite%20your%20cup%20of%20tea?%20I%20have%20some%20other%20Nutella%20recipes%20you%20might%20like:%3C/p%3E%3Cp%3EHappy%20Nutella%20Day!%20What's%20your%20favorite%20Nutella%20vehicle%20or%20recipe?%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3ENutella%20Toffee%20Biscotti%3C/p%3E%3Cp%3E(adapted%20from%20a%20basic%20biscotti%20recipe%20written%20on%20a%20piece%20of%20paper%20in%20my%20recipe%20folder)%3C/p%3E%3Cp%3EMakes%20about%203%20dozen%20biscotti.%20Remember,%20don't%20skip%20the%20second%20baking!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20flour,%20baking%20powder,%20baking%20soda%20and%20salt.%20In%20a%20stand%20mixer,%20beat%20the%20eggs%20for%20a%20minute%20or%20two,%20then%20add%20the%20sugar%20and%20beat%20until%20well%20combined.%20Mix%20in%20the%20Nutella.%20Add%20the%20flour%20mixture%20in%20small%20increments%20until%20it%20is%20all%20incorporated.%20On%20lowest%20speed,%20fold%20in%20the%20toffee%20bits%20and%20chocolate%20chips.%3C/p%3E%3Cp%3ELightly%20flour%20a%20work%20surface%20and%20your%20hands.%20Divide%20the%20dough%20(it%20will%20be%20VERY%20sticky!)%20into%20two%20roughly%20equal%20portions%20and%20form%20each%20portion%20into%20a%20log.%20Place%20the%20logs,%20with%20lots%20of%20spreading%20room,%20onto%20a%20large%20baking%20sheet%20lined%20with%20parchment%20paper.%20Lightly%20press%20and%20shape%20the%20logs%20into%20two%20large%20rectangles%20about%201/2%22%20-%203/4%22%20thick.%3C/p%3E%3Cp%3EBake%20for%2020%20minutes%20and%20remove%20from%20the%20oven;%20lower%20the%20oven%20temperature%20to%20300%20degrees.%20Let%20the%20rectangles%20cool%20on%20the%20baking%20sheet%20for%20about%2010%20minutes%20(if%20you%20don't,%20they%20won't%20be%20firm%20enough%20to%20cut).%20Move%20the%20rectangles%20to%20a%20cutting%20board%20and,%20with%20a%20serrated%20knife,%20cut%20them%20on%20the%20diagonal%20into%20slices%20(mine%20were%20about%20an%20inch%20wide).%20Place%20the%20slices%20(with%20one%20cut%20side%20down)%20back%20onto%20the%20baking%20sheet%20and%20bake%20for%20another%208%20minutes.%20Flip%20the%20slices%20over%20and%20re-bake%20for%20another%2010%20minutes.%20Cool%20completely%20on%20a%20wire%20rack.%3C/p%3E){kind=link}
