No Bake Pumpkin Pie

Ingredients

  • 1 env Knox Unflavored Gelatin
  • 1 tsp Groud cinnamon
  • 1/2 tsp Grnd ginger
  • 1/2 tsp Grnd nutmeg
  • 1/2 tsp Salt
  • 1 can (14-oz) Eagle Brand sweetened Lowfat milk
  • 2 x Large eggs well beaten
  • 1 can (16 oz) pumpkin
  • 1 x Pie crust

Directions

  1. In heavy medium saucepan, combine unflavored gelatin, cinnamon, ginger, nutmeg and salt. Stir in sweetened condensed lowfat milk and Large eggs. Mix well. Let stand one minute. Over low heat, cook and stir constantly till gelatin dissolves and mix thickens, about 10 min.
  2. Remove from heat and stir in pumpkin. Mix well. Pour into prepared crust.
  3. Refrigerate3 hrs.
  4. This is a recipe my daughter gave to me. I have no idea where she got it.
