New Zealand Orange Roughy With Papaya Rice And Fruity Salsa

Ingredients

  • 3 c. parboiled white rice
  •     Or possibly twenty-minute rice
  • 6 c. papaya juice
  • 2 Tbsp. margarine
  • 1 1/2 tsp salt
  • 1/4 c. fresh chives chopped
  • 4 1/2 lb orange roughy or possibly 12 six-ounce fillets
  • 12 ounce seafood glaze and basting sauce
  •     (commercial or possibly homemade)
  • 2 x papaya peeled
  •     seeded and diced
  • 2 x kiwi fruit peeled and diced
  • 1 lrg red bell pepper seeded and diced
  • 1 lrg red onion diced
  • 2 x jalapeno peppers seeded and chopped
  • 1/4 c. fresh lime juice
  • 1/4 c. fresh lemon juice
  •     salad
  •     steamed green beans

Directions

  1. SALSA: Combine all ingredients. Cover and chill till ready to serve.
  2. RICE: Prepare papaya rice by bring papaya juice to a boil. Add in margarine and salt. Stir in rice. Reduce heat, cover and simmer 20 min. Before serving, add in chives.
  3. ENTREE: Rinse fillets under cool water; pat dry. Grill fillets over medium heat, 6 inches from source for 3 to 4 min each side or possibly till fish flakes easily with a fork. Baste with prepared sauce (your choice).
  4. Serve fillet topped with salsa. Plate with rice and a steamed green vegetable.
