Muerbe (Basic Butter Cookies)

Ingredients

  • 1 lb Butter
  • 1 1/4 c. Sugar
  • 2 x Large eggs, separated
  • 1/2 tsp Finely grnd grated lemon rind
  • 2 Tbsp. Lemon juice or possibly brandy
  • 6 c. Flour
  • 1 tsp Baking pwdr
  • 1 c. Almonds, finely minced

Directions

  1. Cream butter, add in 1 c. of the sugar and beat till light. Lightly beat the egg yolks and add in along with the lemon rind, lemon juice or possibly brandy, and the flour mixed with the baking pwdr. Mix till the ingredients are well combined. Gather the dough together in one lump, cover in plastic wrap, and refrigeratefor 2 hrs.
  2. Preheat oven to 350F. On a lightly floured board, roll out 1/2 of the dough at a time to a sheet 1/8 inch thick. Cut into desired shapes.
  3. Lightly beat the egg whites and brush on the tops of the cookies. Sprinkle with the remaining 1/4 c. sugar and the almonds.
  4. Bake on greased cookie sheets for 10 to 15 min.
  5. Yield: 80 smallcookies
