Ingredients

  • 1 egg
  • 3/4 c. lowfat milk
  • 1/2 c. vegetable oil
  • 1/2 c. pumpkin
  • 1/2 c. raisins
  • 2 c. all-purpose flour
  • 1/3 c. sugar
  • 3 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 2 teaspoon pumpkin pie spice

Directions

  1. Heat oven to 400 degrees. Grease bottoms only of about 12 medium muffin c.. Beat egg; stir in lowfat milk, oil, pumpkin and raisins. Stir in remaining ingredients all at once, just till flour is moistened. Fill muffin c. 3/4 full. Bake till golden, about 20 min. Immediately remove from pan. Makes 1 dozen.
