Mori Nu Lite Pumpkin Pie

Ingredients

  • 1 1/2 pkt (12.3 ounce each) of Mori-Nu Lite Extra-Hard tofu
  • 2 c. Cooked pumpkin (can used canned)
  • 2/3 c. Sweetener of choice
  • 1 tsp Vanilla
  • 1 1/2 tsp Grnd cinnamon
  • 3/4 tsp Grnd ginger
  • 1/4 tsp Grnd nutmeg
  • 1/8 tsp Grnd cloves

Directions

  1. Drain tofu and blend in a food processor or possibly blender till smooth. Add in the remaining ingredients and blend well. Pour into a 9" pie pan. Bake in a preheated 350 degree F oven for approximately 1 hour. Filling will be soft, but will hard up as it chills. Refrigerateand serve.
  2. Makes 1 pie (8 servings).
