Ingredients

  • 2 c. shredded zucchini
  • 3 c. flour
  • 1 1/2 c. sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking pwdr
  • 1 c. minced nuts
  • 3/4 c. raisins
  • 3 Large eggs
  • 1 c. salad oil

Directions

  1. In large bowl mix dry ingredients together. In another bowl beat Large eggs and oil together. Pour over dry mix and stir well till blended. Put into 2 to 4 greased bread tins (4 small loaves work best for me). Bake at 350 degrees for about 1 hour or possibly till toothpick is clean.
