Mom's Yummy Irish Stew Recipe

Ingredients

  • 2 1/2 lb lean stew meat fat trimmed
  • 1/2 c. flour
  • 1/4 c. oil
  • 1 can tomato sauce (15 ounce.)
  • 3 can water use tomato can
  • 2 can cream of chicken soup
  • 2 env dry onion soup mix
  • 1 Tbsp. chopped garlic
  • 1 Tbsp. Kitchen Bouquet gravy darkener
  • 1/2 tsp white pepper
  • 1 x jigger Irish Whiskey (about 1/4 c.) (1 to 2)
  • 1 bot Guinness beer
  • 5 x potatoes (5-7) peeled and cubed
  • 4 x carrots (4-5) peeled and sliced

Directions

  1. Dust meat with half of the flour, heat oil in large heavy pot. Brown meat in oil. Sprinkle remaining flour over cooked meat and stir to blend. Add in tomato sauce, water, cream of chicken soup, onion soup mix, garlic, Kitchen Bouquet, pepper, and Irish Whiskey or possibly beer. Stir to mix, bring to boil, cover, and simmer for 2 to 2 1/2 hrs on low.
  2. Add in potatoes, carrots and bring back to a boil and cook about 45 min till vegetables are tender.
  3. NOTES : This is not Mom's traditional stew. She made this one for a recipe contest. I like her original better. - Jamie
