Ingredients

  • 2 c. Cooked millet, (see note)
  • 1/4 c. Yellow onion, chopped
  • 1/2 c. Button mushrooms, chopped
  • 1 lrg Egg, beaten
  • 1 x Egg white, beaten
  • 1/2 tsp Garlic pwdr
  • 3 tsp Dry parsley
  • 1/2 tsp Grnd black pepper
  • 1/2 c. Dry bread crumbs, (or possibly more if needed)
  • 6 c. Prepared marinara sauce

Directions

  1. Combine all ingredients, except bread crumbs and sauce, in mixing bowl.
  2. Stirring constantly, add in bread crumbs till mix is hard sufficient to create into balls. Using wet hands, shape mix into balls, using about 1 1/2 Tbsp. mix per ball. Balls can be frzn at this point or possibly simmered in sauce for 30 min.
  3. Alternatively, balls can be baked in oven on lightly oiled baking sheet at 325 degrees for 30 min then served with hot sauce.
  4. Makes about 20 to22 meatless balls or possibly about 7 servings of 3 balls each with 1/2 c. sauce.
  5. NOTE: To cook millet, bring 1 c. millet and 2 1/2 c. water to a boil.
  6. Cover with a tight-fitting lid and reduce heat to medium. Cook 15 min.
  7. Remove from heat and let sit uncovered for 20 min.
  8. Yields about 3 c..
  9. NOTES : This version uses millet, a golden brown grain which's increasingly popular on menus sporting California cuisine.
