Mexican Street Vendor Grilled Corn

This is sold as a snack in Mexico, but happens to make a great side dish, too.

Ingredients

  • oil
  • 6 ears corn, husks and silk removed
  • 1/2 cup Pecorino Romano
  • 1/4 cup mayonnaise
  • 3 tbs. sour cream or Homemade Mexican Crema
  • 3 tbs. chopped cilantro
  • juice of one lime (3-4 tsp.)
  • 1 minced garlic clove
  • 3/4 tsp. Tex-Mex Diablo Dust, or chili powder
  • 1/4 tsp. ground pepper
  • 1/4 tsp. salt
  • cayenne pepper to taste

Directions

  1. Oil the grate with a paper towel.
  2. Combine cheese, mayo, crema, cilantro, lime juice, chili powder, pepper, salt in a bowl, and cayenne, if using. Set aside.
  3. Grill corn on all sides 8-12 minutes, lightly charring the ears.
  4. Toss ears in cheese mixture, serve immediately.
