Mediterranean Penne Pasta and Beans Recipe

Ingredients

  • 6 oz. (1 3/4 cups) uncooked penne (tube-shaped pasta)
  • 1 T olive oil
  • 2 garlic cloves, minced
  • 2 (14.5-oz.) cans diced tomatoes, undrained
  • 1 (15-oz.) can kidney beans, drained and rinsed
  • 1-1/2 t. dried Italian seasoning
  • 1 t sugar
  • 6-8 cups fresh chard, stems removed and chopped (or a 10-oz. pkg. prewashed fresh spinach)
  • 2 oz. (1/2 cup) crumbled feta cheese
  • 1/4 cup sliced ripe olives
