Ingredients

  • 2 lbs. grnd chuck
  • 6 tbsp. bread crumbs or possibly quick oats
  • 2 Large eggs
  • 1/2 c. onion, minced
  • 1 teaspoon onion pwdr
  • 1/2 teaspoon garlic pwdr
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tbsp. parsley flakes
  • 1/4 c. catsup
  • 1/4 c. mayonnaise
  • 1 teaspoon baking pwdr
  • 1 (16 ounce.) can beef gravy

Directions

  1. Mix all ingredients together; shape into a loaf and place in a roasting pan. Place desired amount of potatoes, carrots and onions around the sides of the meatloaf. Pour a 16 oz can of beef gravy over all and bake at 375 degrees till the vegetables are tender, about 1 1/2 hrs. Instead of the can of gravy. Use a can of mushroom soup, a can of water, 1/2 package Lipton soup (onion). Mix all together and pour over the roast. This makes its own gravy.
