Ingredients

  • 2 c. kidney beans, liquid removed
  • 2 c. cooked brown rice
  • 1 c. sliced carrots
  • 1 c. sliced onions
  • 1 c. sliced zucchini (or possibly other summer squash)
  • 2 tbsp. butter
  • 2 1/2 tbsp. flour
  • 2 c. lowfat milk
  • 3/4 c. instant lowfat milk
  • 2 teaspoon curry pwdr
  • 1 teaspoon honey (optional)

Directions

  1. Saute/fry vegetables till just tender.
  2. Make white sauce by melting butter. Add in flour and cook a few min. Slowly add in lowfat milk, stirring with a whisk. Add in instant lowfat milk, curry pwdr (to taste) and optional honey.
  3. Mix rice and beans and top with vegetables and then sauce. Add in condiments as desired.
