Matcha and Chia Mochi Cake

Matcha and Chia Mochi Cake is a delightfully simple snacking cake flavorful with vanilla, matcha and chia seeds. This recipe was inspired by Raw Spice Bar, who sent me their April Spice Box to try. Affiliate links have been used to link to items I am discussing.

,%20I%20kinda%20let%20things%20slide.%3C/p%3E%3Cp%3ESo!%20The%20reason%20the%20next%20few%20posts%20are%20slightly%20complicated%20is%20because%20the%20next%20few%20recipes%20originated%20with%20a%20company%20called%20Raw%20Spice%20Bar,%20but%20I%20did%20not%20want%20to%20share%20them%20all%20at%20once.%20But%20I%20am%20hoping%20to%20do%20a%20giveaway.%20And%20this%20particular%20recipe,%20while%20inspired%20by%20and%20certainly%20made%20more%20convenient%20by%20the%20Raw%20Spice%20Bar%20April%20Spice%20Box,%20can%20be%20made%20pretty%20easily%20without%20it%20I%20think.%20So,%20stay%20tuned%20for%20more%20information%20about%20and%20reviews%20of%20Raw%20Spice%20Bar,%20but%20for%20now%20I%20am%20super%20excited%20to%20share%20specifically%20this%20mochi%20cake!%3C/p%3E%3Cp%3EI%20first%20had%20mochi%20cake%20at%20a%20fantastic%20Malaysian%20restaurant%20called%20Straits%20of%20Malacca%20about%2045%20minutes%20from%20my%20house%20(i.e.,%20definitely%20not%20in%20my%20small%20town.%20Alas),%20where%20I%20was%20blown%20away%20by%20its%20distinctive%20chewy%20texture%20(I%20realize%20that%20sounds%20like%20damning%20with%20faint%20praise,%20I%20just%20don%E2%80%99t%20know%20how%20else%20to%20describe%20it).%20Mochi%20cake%20is%20a%20gluten%20free%20cake%20made%20with%20glutinous%20rice%20flour%20(such%20as%20Mochiko%20(Sweet%20Rice%20Flour))%20and%20usually%20coconut%20milk.%3C/p%3E%3Cp%3EI%20have%20seen%20it%20flavored%20with%20vanilla,%20matcha%20(a%20particular%20Japanese%20green%20tea),%20chia%20seeds%20and%20pandanus%20leaf,%20but%20there%20is%20no%20reason%20it%20could%20not%20be%20flavored%20with%20any%20other%20particular%20extracts%20or%20spices.%3C/p%3E%3Cp%3EI%20served%20this%20Matcha%20and%20Chia%20Mochi%20Cake%20sprinkled%20with%20powdered%20sugar%20and%20with%20whipped%20cream%20on%20the%20side.%20My%20family%20adored%20it.%20It%20is%20a%20small%20snacking%20cake,%20and%20it%20lasted%203%20nights%20for%20us%E2%80%93and%20both%20kids%20were%20quite%20bitter%20on%20night%204%20when%20they%20realized%20it%20was%20gone.%20It%20was%20super%20simple%20to%20whip%20up%E2%80%93I%20am%20so%20glad%20that%20Raw%20Spice%20Bar%20pushed%20me%20over%20the%20hump%20to%20make%20this%20cake%E2%80%93I%20am%20imagining%20all%20the%20other%20flavors%20I%20can%20make%20it%20with,%20and%20I%20am%20confident%20that%201%20teaspoon%20of%20matcha%20powder%20and%201%20teaspoon%20of%20ground%20chia%20seeds%20would%20work%20just%20fine%20if%20I%20want%20to%20make%20this%20exact%20cake%20again.%20Which%20is%20why%20I%20am%20confident%20you%20can%20make%20this%20also!%3C/p%3E%3Cp%3EMatcha%20and%20Chia%20Mochi%20Cake%20%20%20%20Ingredients%3C/p%3E%3Cp%3E1%20cup%20glutinous%20sweet%20rice%20flour%201%20t%20baking%20powder%201%20t%20matcha%20powder%201%20t%20ground%20chia%20seeds%20%C2%BC%20t%20fine%20sea%20salt%20%C2%BD%20cup%20sugar%201%20cup%20coconut%20milk%201%20t%20vanilla%20extract%202%20T%20butter,%20melted%202%20eggs%20%20%20Instructions%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20Line%20an%208x8%20baking%20pan%20with%20parchment%20paper.%20Set%20aside.%20Whisk%20together%20the%20rice%20flour,%20baking%20powder,%20matcha%20powder,%20ground%20chia%20seeds,%20salt%20and%20sugar.%20In%20a%20separate%20bowl,%20whisk%20together%20the%20coconut%20milk,%20vanilla,%20melted%20butter%20and%20eggs.%20Mix%20the%20wet%20and%20dry%20ingredients%20together%20gently.%20Scrape%20the%20batter%20into%20the%20parchment%20lined%20pan.%20Bake%20for%20around%2035%20minutes,%20until%20the%20cake%20is%20lightly%20browned%20and%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean.%20Let%20cake%20cool%20in%20pan%20for%2015%20minutes,%20before%20gently%20lifting%20out%20and%20placing%20on%20a%20cooling%20rack%20to%20cool%20completely.%20Dust%20with%20powdered%20sugar%20before%20serving.%20%203.2.2925%3C/p%3E%3Cp%3EIf%20you%20love%20vertical%20collages%20for%20pinning,%20here%E2%80%99s%20one!%3C/p%3E){kind=link}
