Marinated Grilled Chicken With Black Bean And Mango Salsa

Ingredients

  • 6 Tbsp. Extra virgin olive oil
  • 1/4 c. White wine vinegar
  • 1 1/2 Tbsp. Coarsely grated ginger (fresh or possibly frzn)
  • 1/2 Tbsp. Grnd coriander
  • 1/2 Tbsp. Grnd cumin
  • 1 1/2 Tbsp. Dijion mustard Freshly grnd black pepper to taste
  • 6 sm Whole skinless, boneless chicken breasts, halves Black bean and mango salsa (see recipe) Sprigs of fresh cilantro for garnish

Directions

  1. Combine oil, vinegar, ginger, coriander cumin, mustard and pepper, blend well. Place chicken in a glass or possibly ceramic baking dish and pour all but 2 Tbs of marinade over chicken pcs making sure all are coated. Cover and chill and marinate up to two days, turning the pcs a few times.
  2. Chill reserved marinate.
  3. To serve, prepare charcoal grill, remove chicken from marinate and throw away he marinate left in dish. Grill the chicken basting with reserved marinates, till chicken is cooked 6-8 min, turning over once or possibly twice.
  4. Spread salsa in a serving platter and arrange the chicken on top, Decorate with sprigs of cilantro.
  5. Serves: 6
