%20with%20the%20maple%20syrup%20(and%20a%20lot%20of%20water)%20for%20a%20sweet%20potato%20glaze.%20I%20decided%20to%20include%20balsamic%20vinegar%20in%20my%20glaze%20as%20well.%20It%20did%20not%20take%20long%20for%20me%20to%20find%20the%20balance%20and%20taste%20I%20wanted%20in%20a%20very%20easy%20glaze%20to%20make.%3C/p%3E%3Cp%3EThe%20maple%20syrup%20bumps%20up%20the%20flavor%20and%20sweetness%20of%20the%20sweet%20potatoes,%20while%20the%20balsamic%20vinegar%20adds%20a%20light%20acidic%20punch.%20A%20little%20(or%20a%20lot)%20of%20cinnamon%20also%20adds%20a%20little%20sweetness%20and%20warmth%20to%20the%20potatoes.%20Best%20of%20all,%20all%20of%20the%20ingredients%20can%20easily%20be%20adjusted%20to%20suit%20your%20tastes.%3C/p%3E%3Cp%3EI%20think%20the%20hardest%20part%20of%20this%20easy%20dish%20is%20just%20cutting%20the%20raw%20sweet%20potatoes.%20%20%20%20A%20heavier,%20sharp%20knife%20is%20a%20big%20help!%20The%20really%20good%20news%20is%20you%20can%20prep%20the%20sweet%20potatoes%20hours%20or%20even%20the%20night%20before%20you%20want%20to%20cook%20them.%20You%20just%20need%20to%20place%20them%20in%20a%20container%20of%20cold%20water%20as%20you%20get%20them%20cut%20into%20cubes%20and%20store%20the%20container%20in%20the%20refrigerator%20until%20you%20are%20ready%20to%20cook%20them.%20Before%20using,%20just%20lay%20them%20out%20on%20layers%20of%20towels%20and%20pat%20to%20dry.%3C/p%3E%3Cp%3EI%20like%20how%20quickly%20smaller%201%20to%201/2%20inch%20pieces%20of%20sweet%20potatoes%20cook,%20but%20you%20can%20cut%20them%20into%20whatever%20size%20pieces%20you%20desire.%20If%20you%20go%20above%201%201/2%20inch%20pieces,%20I%20would%20definitely%20cook%20the%20potatoes%20with%20just%20the%20olive%20oil%20coating%20before%20putting%20them%20in%20the%20glaze%20to%20coat%20and%20finish%20baking%20them.%3C/p%3E%3Cp%3EMaple%20Glazed%20Roasted%20Sweet%20Potatoes%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3ELine%20a%20baking%20sheet%20with%20foil%20and%20spray%20with%20oil%20or%20other%20non-stick%20cooking%20spray.%3C/p%3E%3Cp%3EPlace%20cubed%20sweet%20potatoes%20in%20a%20bowl%20(or%20a%20bag)%20and%20coat%20with%20oil%20and%20salt.%3C/p%3E%3Cp%3EPlace%20in%20a%20single%20layer%20on%20the%20lined%20baking%20sheet%20and%20bake%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3EMix%20syrup,%20vinegar,%20water%20and%20cinnamon%20in%20a%20bowl%20(it%20can%20be%20the%20one%20you%20just%20used%20for%20the%20olive%20oil)%20to%20make%20the%20glaze.%3C/p%3E%3Cp%3ERemove%20the%20hot%20potatoes%20from%20the%20oven%20and%20slide%20them%20into%20the%20glaze%20mixture.%3C/p%3E%3Cp%3EGently%20coat%20them%20in%20the%20glaze.%3C/p%3E%3Cp%3EPlace%20back%20on%20the%20baking%20sheet%20in%20a%20single%20layer%20and%20return%20to%20the%20oven%20for%20several%20more%20minutes%20until%20desired%20tenderness%20and%20color,%20about%208%20to%2015%20minutes%20total%20roasting%20time%20dependeding%20on%20size%20of%20potato%20pieces.%3C/p%3E%3Cp%3ENOTE:%20Especially%20if%20use%20small%20potato%20cubes,%20you%20can%20coat%20them%20in%20the%20oil%20and%20salt%20and%20them%20place%20them%20in%20a%20bowl%20with%20the%20glaze%20BEFORE%20cooking%20them.%20The%20smaller%20pieces%20cook%20fast%20enough%20that%20they%20do%20not%20burn%20before%20they%20are%20tender.%3C/p%3E%3Cp%3E4.3.1.2%3C/p%3E%3Cp%3Ehttp://www.asimplehomecook.com/maple-glazed-roasted-sweet-potatoes/%3C/p%3E%3Cp%3E2015%3C/p%3E%3Cp%3EI%20usually%20make%20more%20than%20I%20know%20we%20will%20eat%20to%20have%20leftovers%20the%20next%20day.%20%20They%20are%20great%20in%20my%20sweet%20potato%20and%20lentil%20hash.%3C/p%3E){kind=link}
