Ingredients
- 5 lb fully-cooked semi-boneless ham - (to 6)
- 1 c. maple syrup
- 1/4 c. orange marmalade
- 1 Tbsp. Dijon-style mustard
- 8 med sweet potatoes peeled, and cut into 2" chunks
- 1 can pineapple chunks - (20 ounce) liquid removed
- 1 jar maraschino cherries - (7 ounce) liquid removed
Directions
- Preheat the oven to 350 degrees. Line a roasting pan with aluminum foil and coat the foil with nonstick cooking spray. Place the ham in the roasting pan.
- In a large bowl, combine the maple syrup, marmalade, and mustard; mix well. Add in the potatoes and toss, coating completely. Place the potatoes around the ham and use the remaining maple syrup mix to coat the ham on all sides.
- Sprinkle the pineapple chunks and cherries over the potatoes and bake for 1 3/4 to 2 hrs, or possibly till the ham is golden brown and the potatoes are fork-tender, basting with the pan juices and stirring the potatoes every 30 min.
- This recipe yields 8 to 10 servings.
- Preparation Shortcut: Using canned sweet potatoes instead of fresh won't only reduce your preparation time, but your cooking time, too.
