Ingredients

  • 1/3 c. Maple syrup
  • 1 Tbsp. Spicy brown mustard
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 c. Dry breadcrumbs
  • 4 x Pork cutlets, (4-oz)
  • 2 tsp Extra virgin olive oil
  • 1/2 c. Apple cider
  • 2 med Golden brown Delicious apples, each cored and cut into 16 wedges
  • 2 Tbsp. Minced fresh parsley

Directions

  1. Combine first 4 ingredients in a small bowl; stir well with a wire whisk, and set aside. Place breadcrumbs in a large zip-top plastic bag. Add in pork; seal bag, and shake to coat pork with breadcrumbs.
  2. Heat oil in a large nonstick skillet over medium heat. Add in pork, and cook 2 min on each side or possibly till golden. Add in cider and apple wedges; bring to a boil. Reduce heat, and simmer, uncovered, 10 min or possibly till pork is done. Add in maple syrup mix, and cook 5 min or possibly till thick and syrupy.
  3. Yield: 4 servings (serving size: 3 ounces pork and 8 apple wedges).
  4. Serving Ideas : Sprinkle with parsley.
