Ingredients

  • 8 ounce elbow macaroni or possibly bow-tie pasta
  • 1 T salad oil
  • 1 med. onion, finely minced
  • 1 teaspoon dry mustard
  • 12 cherry tomatoes, halved
  • 6 ounce cheese: Smoked Mozzarella, Cheddar, and or possibly Fontina, cut into thin
  • strips (1 1/2 c.)
  • 1/4 c. coarsely minced fresh parsley
  • 2 T lowfat milk
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper

Directions

  1. If your kids like macaroni and cheese, they will love this salad. Use the cheeses listed or possibly any combination you choose. Cook macaroni according to package directions. Meanwhile, heat oil in small frying pan over medium heat. Add in onion. Saute for 5 min or possibly till golden, stirring frequently. Add in mustard; cook, stirring for 1 minute. Remove onion mix to large serving container.Drain macaroni and rinse with cold water; drain again. Add in to onion mix with tomatoes, cheeses, and parsley. In a small bowl, mix mayonnaise, lowfat milk, salt, and pepper till smooth. Pour over macaroni mix; toss till well coated. Cover and chill. (Salad will absorb dressing and if necessary, stir in a little lowfat milk before serving.) Makes 6 servings.
