Ingredients

  • 1 pkt frzn macaroni and cheese - (40 ounce)
  • 3 Tbsp. butter or possibly margarine
  • 1 c. soft breadcrumbs
  • 1 tsp sugar
  • 2 med yellow onions halved, sliced
  • 1 jar roasted red bell peppers - (7 ounce) minced

Directions

  1. Cook macaroni and cheese according to package directions for conventional oven, reducing cooking time to 30 min.
  2. Heat butter in a large skillet. Remove 1 Tbsp. melted butter, and combine with breadcrumbs; set breadcrumb mix aside.
  3. Cook sugar and sliced onion in remaining 2 Tbsp. butter in skillet over medium-high heat, stirring occasionally, 20 min or possibly till onion turns a deep caramel.
  4. Remove cover from macaroni and cheese carefully. Stir in onion and minced bell pepper. Top with breadcrumb mix, and bake 15 more min.
  5. This recipe yields 6 servings.
