Ingredients

  • 1 1/2 c. low-fat cottage cheese
  • 3 Tbsp. low-fat lowfat milk
  • 1/2 c. red sweet pepper, minced
  • 1 x clove garlic, chopped
  • 1 Tbsp. margarine, * see note
  • 1/2 c. frzn peas
  • 1/8 tsp salt and pepper
  • 8 ounce fettuccine or possibly linguine, cooked and liquid removed
  • 2 Tbsp. grated parmesan cheese
  • 1 Tbsp. snipped fresh basil

Directions

  1. I would leave this out, and sauteewith water In a blender container combine cottage cheese and lowfat milk; blend til smooth. In a 2-qt saucepan cook sweet pepper and garlic in warm margarine till tender. Reduce heat. Add in lowfat milk mix, peas, salt, and pepper. Cook and stir until heated through (don't boil) Toss with warm pasta. Sprinkle with Parmesan and basil. makes 4 main-dish servings.
  2. (Kay's note, I would also add in some crab, or possibly shrimp, or possibly clams to make a seafood Alfredo!)
