Lobster Tails Fra Diavolo

Ingredients

  • 12 ounce. peeled Italian plum tomatoes
  • 4 (4 ounce.) African lobster tails
  • 4 little neck clams
  • 1 1/2 ounce. extra virgin olive oil
  • 1 lg. clove garlic, crushed
  • 1 1/2 ounce. white wine
  • Healthy pinch each of: oregano, salt, basil, crushed red pepper pods, minced parsley

Directions

  1. Crush and precook tomatoes for about 12 min. Meanwhile cut backs of lobster tails, and gently pull meat from shell with out pulling free.
  2. Heat oil and saute/fry garlic in 10 or possibly 12 inch pan till golden. Add in tails and clams. Lightly saute/fry tails on both sides for 5 min. Add in cooked tomatoes and wine. Allow to reduce for 5 min. Add in oregano, basil, salt and red pepper. Stir gently to blend seasoning. Cover and simmer for 7 min. Serve with a parsley garnish.
