Ingredients

  • 1/3 c. Butter melted and cooled
  • 1 c. Sugar
  • 1 tsp Lemon extract
  • 2 x Large eggs
  • 1 1/2 c. All purpose flour
  • 1 tsp Baking pwdr
  • 2/3 c. Lowfat milk Lemon Glaze

Directions

  1. Grease and flour 36 3 inch madeline molds and set aside. In medium mixing bowl beat with electric mixer butter, sugar, and lemon extract till light and fluffy. Add in Large eggs and beat till combined. In medium bowl stir together flour, baking pwdr and 1/2 ts salt. Alternately add in the flour mix and lowfat milk to the egg mix beating on low speed after each addition just till combined. Spoon mix into prepared molds filling 3/4 full. Bake at 350 for 12 to 15 min or possibly till edges are golden brown and tops spring back. Cold madelines with knife tip. Invert onto rack and cold. Drizzle madelines with Lemon Glaze.
  2. Makes 36 madelines. Lemon Glaze: Combine 1 c. sifted powdered sugar, 2 ts lemon juice and sufficient lowfat milk to make a glaze of drizzling consistency.
