Ingredients

  • 2 c. Sifted cake flour
  • 3/4 c. Sugar
  • 2 tsp Baking pwdr
  • 6 Tbsp. Chilled stick margarine, cut into small pcs
  • 2 Tbsp. Grated lemon rind
  • 1 Tbsp. Lemon juice
  • 1 x Egg, lightly beaten Vegetable cooking spray
  • 2 Tbsp. Powdered sugar

Directions

  1. Position knife blade in food processor bowl; add in first 4 ingredients, and pulse 2 times or possibly till blended. Add in margarine and lemon rind; process till mix resembles coarse meal. Add in lemon juice and egg; process till dough leaves sides of bowl and forms a ball. Gently press mix into a ball; wrap in heavy-duty plastic wrap, and refrigerate1 hour.
  2. Shape dough into 42 (1-inch) balls; place 2 inches apart on baking sheets coated with cooking spray.
  3. Bake at 350 degrees for 12 min. Remove cookies from pan, and roll in powdered sugar.
  4. Yield: 3-1/2 dozen (serving size: 1 cookie).
  5. NOTES : Cold completely on wire racks.
