Left Over Corned Beef Split Pea Soup

Ingredients

  • 1 pkt green split peas
  • 1 pkt yellow split peas
  • 4 stalk celery thinly sliced
  • 1 lrg onion minced, fine
  • 2 x cloves garlic chopped
  • 1 1/2 tsp white pepper
  • 10 c. corned beef liquid
  • 6 c. water
  • 1 c. carrots thin sliced or possibly grate
  • 1 c. leftover corned beef minced

Directions

  1. Combine all ingredients in the same pot you've just cook the corned beef and veggies in. Bring to a boil, then cook till peas are soft, about 2 - 3 hrs, on simmer. Stir often as peas tend to stick and burn. Add in more water if necessary.
  2. Soup freezes well. I keep the liquid hot while we eat dinner. Then I throw all the ingredients in the pot and cook. It will be ready for the freezer or possibly fridge by the time you go to bed.
