This is a very easy and healthy dish. A refreshing Spring and Summer dish. Goes great with a good white, zinfandel wine or Saki.. Add white rice as a side dish. As an appetizer, add grilled or steamed pot stickers. Enjoy!!!!

Goes Well With: White rice, crisp white wine
Ingredients
2 lbs chicken breast, cut up into 1/2 to 1 inch piece
3 whole zucchinis, sliced in half into 1/2 to 1 inch half moons or quarters
2 onions sliced into quarters
1 lb shredded carrots
Season to taste with Monterey chicken seasoning, lime pepper seasoning, or any other favorite seasonings
Directions
Oil and heat large fry pan over medium heat
Add cut up chicken and begin to saute
Add onions after about 5 minutes
After chicken is about half way cooked, add carrots and zucchini, and saute until done.
