Ingredients

  • 2/3 c. Graham Cracker Crumbs
  • 2 Tbsp. Unsalted Margarine, Melted
  • 1 Tbsp. Sugar
  • 1 env Unflavored Gelatin
  • 1/4 c. Water
  • 1/3 c. Sugar
  • 2 Tbsp. Water
  • 1/2 c. Evaporated Skim Lowfat milk, Heated
  • 2 tsp Vanilla Extract
  • 8 ounce Plain Low-Fat Yogurt
  • 4 whl Kiwi Fruit, Peeled And Sliced

Directions

  1. Combine graham crackers crumbs, margarine, and 1 Tbsp. sugar. Press mix firmly onto bottom and sides of an 8 inch pieplate. Bake at 350 degrees for 12 min. Let cold. Dissolve gelatin in 1/4 c. water in a small bowl. Set aside. Combine 1/2 c. sugar and 2 Tbsp. water in a small heavy saucepan. Cook over medium heat, stirring occasionally, till golden. Add in lowfat milk; cook over low heat, stirring constantly, till smooth. Add in dissolved geleatin; cook, stirring constantly, till gelatin dissolves. Remove from heat; add in vanilla, stirring well. Pour mix into a medium bowl; cover and chill 30 min or possibly till consistency of unbeaten egg white. Beat at medium speed of electric mixer 3 min or possibly till light and fluffy; add in yogurt, beating till smooth. Spoon mix into prepared shell. Chill. Arrange kiwi slices on top of pie just before serving.
