Karen's Cheating Gringos version of my Cousin's Mexican Beans Recipe

When I have the taste for my Cousin Barbara's beans and don't have the time, this is what I do.

Ingredients

  • 2 small or 1 large can of Pinto Beans
  • 1/2 Bunch Fresh Cilantro
  • 1 Medium Tomato, Seeded and diced fine
  • 1 Green Pepper, Diced Fine
  • 1 Medium Onion, Diced fine
  • 2 Jalapeno Peppers, Seeded and Diced Fine
  • 1 package Bacon Bits - (I like Kraft that comes in a plastic bag in the salad isle of the grocery store)
  • 1 Tbs. Oil
  • Salt to taste
  • Serve With:
  • Pulled Chicken or Beef
  • Lettuce
  • Tomato
  • Shredded lettuce
  • Shredded cheese
  • Salsa or Pico de Gallo (fresh is best)
  • Sour Cream
  • Tostadas
  • Taco Shells
  • Flour Tortillas

Directions

  1. Place oil over medium heat in large skillet. Once hot, add onion and green pepper into pan and stir until onion is transparent. Add tomato, jalapeno and cilantro and cook for 2 minutes longer. Open the cans of beans and add the liquid to the pan. In a mini-food chopper, puree beans and then add into pan. Stir well until most of the canned liquid has evaporated. Add bacon bits and salt to taste.
  2. Enjoy!
