I love cheesecake. I love the silkiness of New York style cheesecake. I love it plain. I love it topped with fresh fruit, or drizzled with caramel. I love it made with pumpkin, and I once enjoyed a decadent "Cheesecake Factory" Peppermint Cheesecake with a chocolate crust and drizzled with dark chocolate. Oddly enough, I don't eat it very often. The only reason for this, is that cheesecake (to me) equals a very guilt-ridden dessert treat. It's also deadly addicting, to me.

%20equals%20a%20very%20guilt-ridden%20dessert%20treat.%20It's%20also%20deadly%20addicting,%20to%20me.%3C/p%3E%3Cp%3EGerman%20K%C3%A4sekuchen%20is%20a%20rare%20animal%20to%20find.%20%20It's%20also%20a%20fond%20childhood%20memory%20of%20a%20time%20when%20our%20family%20lived%20in%20Germany.%20%20The%20German%20version%20of%20cheesecake%20is%20different.%20%20The%20texture%20is%20most%20similar%20to%20a%20ricotta-based%20cheesecake.%20%20It's%20not%20as%20creamy,%20but%20has%20more%20of%20a%20dense%20texture.%20It's%20somewhat%20sweet,%20but%20a%20lot%20less%20than%20American%20versions.%20%20The%20crust%20isn't%20made%20with%20graham%20crackers,%20but%20with%20more%20of%20a%20butter-shortbread%20dough.%20%20The%20ingredient%20that%20is%20unique%20to%20this%20cheesecake%20is%20%22Quark%22.%3C/p%3E%3Cp%3EWhenever%20Craig%20and%20I%20head%20to%20one%20of%20our%20timeshares%20in%20the%20%22Gold%20Rush%20Country%22%20of%20Angel's%20Camp,%20we%20stop%20at%20the%20Oakdale%20Cheese%20Company.%20%20We%20buy%20an%20assortment%20of%20their%20Gouda%20cheeses%20and%20I%20usually%20buy%20a%20slice%20of%20their%20German%20Cheesecake.%20%20One%20the%20way%20back%20home,%20we%20stopped%20again,%20and%20I%20decided%20to%20buy%20Quark.%20%20It%20was%20time%20for%20me%20to%20see%20if%20I%20could%20recreate%20this%20childhood%20favorite%20cheesecake.%3C/p%3E%3Cp%3EI've%20also%20spotted%20Quark%20at%20Whole%20Foods.%3C/p%3E%3Cp%3EThe%20texture%20of%20Quark%20is%20very%20similar%20to%20ricotta%20cheese.%20You%20could%20also%20use%20cottage%20cheese,%20pureed%20in%20a%20blender.%20After%20searching%20the%20internet,%20I%20stumbled%20across%20%22Diana's%20Dessert's%22%20and%20I%20found%20the%20recipe%20that%20sounded%20like%20I%20was%20looking%20for.%20%20First,%20the%20crust:%3C/p%3E%3Cp%3EWe%20begin%20with%20flour,%20sugar,%20butter%20(that%20I've%20grated,%20as%20it's%20cold),%20vanilla%20sugar,%20lemon%20zest%20and%20one%20egg.%20Using%20a%20food%20processor,%20the%20butter%20is%20cut%20into%20the%20dry%20ingredients.%20Last,%20the%20egg%20is%20added,%20and%20the%20dough%20is%20kneaded%20and%20then%20covered%20in%20plastic%20and%20refrigerated%20for%20at%20least%20an%20hour.%20NOTE:%20The%20smell%20of%20the%20lemon-zest%20and%20vanilla%20sugar%20really%20brought%20back%20childhood%20memories%20in%20Germany.%3C/p%3E%3Cp%3EThe%20dough%20is%20a%20little%20temperamental,%20at%20first.%20I%20begin%20by%20rolling%20it%20out%20once.%20Then%20folding%20it%20again,%20and%20rolling%20it%20out%20for%20a%20second%20time.%20%20Using%20a%20springform%20pan,%20the%20dough%20is%20laid%20out%20and%20then%20I%20had%20to%20press%20it%20into%20shape.%20Set%20aside.%3C/p%3E%3Cp%3EFor%20the%20filling,%20we%20need%20egg%20yolk,%20vanilla%20sugar,%20sugar,%20butter,%20heavy%20cream,%20Quark,%20egg%20whites,%20corn%20starch%20and%20a%20pinch%20of%20salt.%20%20Beat%20the%20egg%20yolks%20with%20the%20sugar%20and%20vanilla-sugar%20until%20pale%20and%20foamy.%20Add%20the%20softened%20butter%20and%20beat%20well,%20then%20add%20the%20heavy%20cream%20and%20beat%20again.%20Add%20the%20quark%20and%20stir%20until%20the%20mixture%20is%20smooth%20and%20throughly%20combined.%20%20I%20added%20two%20of%20my%20favorite%20baking%20additives,%20to%20the%20filling.%20%20Fiori%20di%20Sicilia%20is%20an%20all-natural%20combination%20of%20citrus%20and%20vanilla.%20%20Loranne's%20Buttery%20Sweet%20Dough%20is%20my%20%22secret%20ingredient%22%20that%20I%20add%20to%20a%20lot%20of%20my%20baking%20goods.%20%20You%20don't%20need%20these%20for%20these%20recipes,%20but%20I%20felt%20it%20added%20a%20very%20%22European%22%20flavor%20to%20the%20filling.%3C/p%3E%3Cp%3ELast,%20whisk%20the%20egg%20whites%20with%20the%20salt%20until%20very%20stiff,%20then%20very%20gently%20fold%20in%20the%20quark%20mixture,%20also%20adding%20the%20sifted%20cornstarch%20a%20little%20at%20a%20time.%3C/p%3E%3Cp%3EPour%20the%20filling%20into%20the%20crust%20shell%20and%20I%20used%20an%20off-set%20spatula%20to%20even%20out%20the%20filling.%20%20I%20trimmed%20the%20dough,%20leaving%20about%201%22%20above%20the%20filling%20line.%20Bake%20in%20preheated%20300%20degrees%20F%20(150%20C)%20oven%20for%2050%20to%2060%20minutes%20(longer%20if%20necessary)%20until%20well%20risen%20and%20golden%20%E2%80%93%20it%20resembles%20a%20souffle%20at%20this%20point%20(It%20will%20sink%20in%20the%20middle%20quite%20dramatically%20%E2%80%93%20don%E2%80%99t%20worry,%20it%E2%80%99s%20supposed%20to%20do%20this).%20Turn%20the%20oven%20off,%20and%20let%20the%20cheesecake%20rest%20in%20the%20oven%20for%2015%20minutes;%20then%20remove%20it%20from%20the%20oven,%20cool%20for%20an%20hour%20or%20so%20at%20room%20temperature,%20and%20refrigerate%20for%20several%20hours%20before%20releasing%20sides%20of%20pan%20and%20serving.%20(I%20made%20this%20cheesecake%20a%20day%20before%20serving.)%3C/p%3E%3Cp%3EThe%20next%20day,%20it%20was%20time%20to%20taste%20this%20cheesecake.%3C/p%3E%3Cp%3ENice%20crust!%3C/p%3E%3Cp%3EThe%20moment%20of%20truth...%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20The%20sweetness%20of%20this%20cheesecake%20is%20very%20mild.%20%20The%20texture%20is%20moist,%20and%20both%20creamy%20with%20a%20slight%20denseness.%20%20The%20crust%20is%20really%20good--%20and%20I'm%20usually%20not%20a%20fan%20of%20pie%20crust.%20%20I%20can%20taste%20very%20subtle%20notes%20of%20citrus.%20%20My%20husband,%20who%20isn't%20a%20fan%20of%20cheese,%20really%20liked%20this%20German%20cheesecake.%20%20I%20actually%20enjoyed%20a%20slice%20for%20breakfast,%20with%20a%20dark%20roast%20coffee.%20%20I%20was%20back%20in%20time,%20as%20that%20child%20who%20would%20hope%20for%20a%20second%20slice%20of%20my%20Oma's%20cheesecake%20that%20she%20had%20brought%20home%20from%20the%20local%20bakery.%20%20It's%20a%20winner.%20%20The%20big%20bonus%20is%20that%20I%20didn't%20feel%20one%20iota%20of%20guilt%20about%20this%20recipe.%20It's%20a%20treat.%20It's%20worthy%20to%20bake%20for%20special%20company.%20%20I%20would%20definitely%20make%20this%20recipe%20again.%20In%20fact,%20I%20have%20a%20frozen%20container%20of%20Quark%20that%20will%20be%20morphed%20into%20this%20delectable%20treat%20in%20the%20next%20few%20months.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
