  • adapted from Taste of Home Jumbo Caramel Banana Muffins
  • Banana muffins made with Splenda Sugar Blend
  • Ingredients
  • 1/4 cup Crisco solid shortening
  • 1/2 cup Splenda Sugar Blend
  • 1 large egg
  • 3 medium sized ripe bananas, mashed
  • 1/2 cup chopped walnuts (optional)
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Caramel Icing:
  • 2 tablespoons butter
  • 2 tablespoons Light Brown Sugar
  • 1 tablespoon half and half
  • 1/2 cup confectioners' sugar
