Jicama And Tropical Fruit Salad

Ingredients

  • 2 x Oranges
  • 2 x Mangoes, peeled and diced
  • 1 x Pineapple, peeled and diced
  • 1 sm Jicama, peeled and diced
  • 1/4 c. Lime juice
  • 1 Tbsp. Sugar
  • 2 Tbsp. Fresh Cilantro, minced
  • 1 c. Fresh grated coconut or possibly Dry unsweetened shredded coconut

Directions

  1. Slice ends off oranges and stand upright. Cut away the skin and membrane, exposing fruit. Cut between the membranes to remove the sections and place in a large bowl. Remove and throw away any seeds. Add in mangoes, pineapple, jicama, lime juice, sugar, cilantro and coconut to bowl and stir to combine. To serve salad, place lettuce leaves on individual chilled plates or possibly a serving platter, and spoon fruit on top.
