Ingredients

  • 1 whl onion, finely minced
  • 1/2 c. Scallions, finely minced
  • 5 whl warm chile peppers, (your favorite), finely grnd
  • 2 tsp Fresh thyme leaves
  • 2 tsp Salt
  • 1 tsp Jamaican pimiento, (allspice berries), grnd
  • 1/4 tsp Nutmeg, grnd
  • 1/2 tsp Cinnamon, grnd
  • 1 tsp Black pepper, grnd

Directions

  1. Mix together all the ingredients to make a paste. A food processor fitted with a steel blade is ideal for this. Store leftovers in the refrigerator in a tightly closed jar for about a month.
