Italian Rum Cake

Ingredients

  • 2 packages. Stella Dora cookies (sponge)
  • 1 lg. pkg. vanilla pudding (instant)
  • 1 lg. pkg. chocolate pudding (instant)
  • 1/2 gallon lowfat milk
  • 1 lg. Cold Whip
  • 1 jar cherry pie filling or possibly fresh strawberries
  • Rum or possibly rum flavor (to taste)
  • Toasted almonds (optional)

Directions

  1. Mix as directed.Cut cookies in half (lengthwise). Line a 9 x 13 inch pan with 1/3 cookies. Add in rum/flavoring to vanilla pudding and pour over first layer of cookies. Put another layer of cookies on the top and add in chocolate pudding (to that rum was also added).
  2. Spread with Cool Whip and add in cherries or possibly strawberries and sprinkle almonds over top. Chill overnight or possibly 4 to 5 hrs before serving.
