Have I mentioned I am counting the seconds until I have some light at dinner time again? Seconds. The better I get at this photography business the more I hate trying to deal with photographing food in the dark. Because I see the problems more clearly.

,%20thereby%20reducing%20my%20work,%20and%20I%20have%20yet%20to%20find%20the%20dish%20that%20is%20not%20improved%20by%20mushrooms.%20I%20am%20happy%20to%20say%20I%20was%20right,%20and%20this%20dish%20had%20us%20all%20licking%20our%20plates.%20My%20mom%20remarked%20several%20times%20that%20although%20she%20is%20not%20the%20world%E2%80%99s%20biggest%20fan%20of%20chicken,%20the%20dish%20was%20delicious.%20My%20often%20citrus%20disdaining%20husband%20pronounced%20it%20addictive.%20My%20children%20were%20too%20busy%20eating%20to%20say%20much.%3C/p%3E%3Cp%3EThis%20dish%20was%20a%20complete%20winner.%20And%20taking%20the%20time%20to%20flour%20and%20brown%20the%20chicken%20is%20the%20most%20complicated%20(by%20which%20I%20mean%20trying%20for%20someone%20as%20impatient%20as%20I%20am)%20part%20of%20it.%20Deceptively%20simple%20and%20relatively%20quick%20(aside%20from%20said%20browning),%20this%20is%20worthy%20of%20being%20served%20to%20company%E2%80%93but%20so%20good%20you%20should%20not%20wait%20for%20that%20occasion.%20Traditionally,%20the%20lemon%20chicken%20is%20served%20with%20potatoes%20I%20think%20(according%20to%20the%20cookbook),%20but%20I%20chose%20to%20serve%20with%20crusty%20bread.%3C/p%3E%3Cp%3ESouthern%20Italian%20Lemon%20Chicken%20with%20Zucchini%20and%20Mushrooms%20%20%20Adapted%20from%20Kate%20Caldesi%20%20Author:%20TheSpicedLife%20Recipe%20type:%20Entree%20Cuisine:%20Italian%20%20%20Ingredients%3C/p%3E%3Cp%3E3%20lbs%20boneless,%20skinless%20chicken%20pieces%20(I%20prefer%20thighs,%20but%20my%20husband%20likes%20breasts%20so%20I%20did%20both)%20salt%20and%20freshly%20ground%20black%20pepper%20for%20chicken%20around%20%C2%BD%20cup%20AP%20flour%202-3%20T%20extra%20virgin%20olive%20oil%204-6%20garlic%20cloves,%20smashed%206%20sprigs%20of%20rosemary%201%20lb%20sliced%20crimini%20mushrooms%204%20small%20zucchinis,%20sliced%20into%20thin%20rounds%201%20cup%20white%20wine,%20divided%20(I%20used%20a%20Pino%20Grigio)%20%C2%BC%20cup%20water%20juice%20of%20one%20lemon--and%20reserve%20the%20lemon%20itself%203%20T%20unsalted%20butter%201%20lemon,%20thinly%20sliced%20%20%20Instructions%3C/p%3E%3Cp%3EPat%20the%20chicken%20dry%20and%20season%20on%20both%20sides%20with%20salt%20and%20black%20pepper.%20Place%20a%20wide,%20shallow%20bowl%20with%20the%20flour%20in%20it%20by%20the%20cook%20top.%20Heat%20a%20large%20skillet%20(I%20used%20a%2014%20inch)%20over%20medium%20heat.%20Add%20the%20olive%20oil.%20When%20it%20starts%20to%20shimmer,%20start%20dragging%20each%20piece%20of%20chicken%20in%20the%20flour%20and%20then%20knocking%20the%20excess%20off.%20Place%20in%20the%20skillet.%20Do%20not%20over%20crowd%20the%20pan,%20you%20will%20probably%20have%20to%20do%20this%20in%20batches.%20Make%20sure%20the%20chicken%20is%20browned%20on%20both%20sides--this%20will%20take%20a%20good%2010%20minutes%20or%20more%20per%20batch.%20After%20each%20piece%20is%20browned,%20just%20place%20it%20in%20a%20bowl%20or%20on%20a%20plate.%20When%20all%20the%20chicken%20has%20been%20browned,%20add%20the%20mushrooms%20with%20a%20pinch%20of%20salt%20to%20the%20pan.%20Also%20add%20the%20garlic%20cloves%20and%20rosemary%20sprigs.%20If%20the%20pan%20is%20too%20dry,%20add%20a%20small%20splash%20of%20olive%20oil%20as%20well.%20Brown%20the%20mushrooms,%20stirring%20occasionally.%20When%20they%20have%20released%20their%20liquids%20and%20are%20starting%20to%20darken,%20add%20the%20zucchini%20with%20another%20pinch%20of%20salt.%20Once%20again%20stir%20occasionally.%20If%20any%20of%20the%20zucchini%20or%20mushrooms%20starts%20to%20stick%20or%20scorch,%20add%20a%20splash%20of%20the%20wine.%20When%20the%20zucchini%20has%20released%20some%20of%20its%20water,%20add%20half%20of%20the%20wine%20and%20scrape%20up%20the%20bottom%20of%20the%20pan.%20All%20those%20lovely%20browned%20bits%20will%20become%20serious%20flavor%20in%20the%20sauce.%20When%20all%20of%20the%20wine%20has%20cooked%20off,%20add%20the%20chicken%20back%20into%20the%20pan%20as%20well%20as%20the%20rest%20of%20the%20wine%20and%20bring%20it%20to%20a%20brisk%20simmer.%20Let%20simmer%20for%203-4%20minutes.%20Stir%20and%20add%20the%20lemon%20juice,%20water%20and%20butter.%20Add%20the%20seeded%20and%20juiced%20lemon%20halves%20to%20the%20pan%20as%20well.%20Bring%20to%20a%20simmer.%20Let%20simmer%20until%20the%20chicken%20is%20cooked%20through.%20Scatter%20the%20dish%20with%20lemon%20slices%20before%20serving.%20%203.2.2925%3C/p%3E){kind=link}
