,%20I%20decided%20to%20save%20it%20for%20another%20day%20and%20keep%20searching.%20%20I%20saw%20a%20ton%20of%20recipes%20for%20Eggplant%20Rolls%20which%20really%20got%20me%20thinking%20about%20how%20I%20could%20play%20with%20this%20concept%20to%20make%20something%20that%20was%20my%20own.%3C/p%3E%3Cp%3EAfter%20picking%20up%20an%20eggplant,%20two%20green%20peppers,%20and%20two%20cucumbers%20(I%20feel%20some%20more%20tzatziki%20coming%20on...I've%20created%20a%20monster%20within%20myself!!)%20at%20the%20farmer's%20market,%20I%20stopped%20at%20Whole%20Foods%20on%20the%20way%20home.%20%20I%20was%20looking%20for%20some%20sort%20of%20soft%20cheese%20to%20use%20as%20part%20of%20my%20filling.%20%20In%20my%20mind,%20I%20was%20already%20picturing%20doing%20something%20similar%20to%20the%20pinwheel%20appetizers%20that%20I%20posted%20last%20week%20and%20using%20some%20prosciutto%20that%20I%20have%20in%20the%20refrigerator%20and%20some%20basil%20(which%20made%20me%20lament%20giving%20up%20on%20our%20basil%20over%20the%20last%20month%20or%20so)%20and%20maybe%20throw%20in%20some%20diced%20tomatoes%20and%20garlic...%20%20I%20wanted%20a%20cheese%20that%20wasn't%20ricotta%20but%20not%20really%20cream%20cheese%20either,%20and%20the%20helpful%20guys%20at%20Whole%20Foods%20suggested%20Capricho%20de%20Cabra.%20%20I%20had%20never%20heard%20of%20it%20before,%20but%20the%20friendly%20one%20helping%20me%20called%20it%20%22a%20step%20above%20cream%20cheese.%22%20%20A%20quick%20google%20search%20informed%20me%20that%20it%20is%20a%20goat%20cheese%20from%20Spain.%20%20Sounds%20good%20to%20me!%3C/p%3E%3Cp%3EThe%20look%20on%20Rick's%20face%20when%20I%20was%20slicing%20up%20the%20eggplant%20betrayed%20his%20skepticism%20about%20the%20meal%20despite%20his%20what%20he%20was%20saying.%20Too%20bad%20I%20didn't%20have%20my%20camera%20handy%20for%20that%20one.%20%20In%20the%20end,%20though,%20the%20eggplant%20won%20him%20over!%20%20Here's%20the%20recipe%3C/p%3E%3Cp%3EEggplant%20Roll-Ups%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350F.%3C/p%3E%3Cp%3ESlice%20off%20the%20ends%20of%20the%20eggplant,%20and%20then%20thinly%20slice%20off%20one%20side%20of%20the%20eggplant%20so%20that%20it%20can%20sit%20stably%20on%20the%20cutting%20board.%20%20Repeat%20on%20the%20opposite%20side%20of%20the%20eggplant.%20Cut%20the%20eggplant%20into%201/4%20inch%20thick%20slices.%20%20Put%20the%20olive%20oil%20on%20a%20plate%20and%20add%20some%20of%20the%20Italian%20seasoning%20to%20it.%20%20Brush%20each%20side%20of%20the%20each%20slice%20of%20the%20eggplant%20with%20the%20olive%20oil%20and%20set%20aside.%3C/p%3E%3Cp%3EHeat%20a%20grill%20to%20medium-high,%20and%20grill%20the%20eggplant%20(about%203-5%20minutes%20per%20side%20depending%20on%20how%20thick%20the%20slices%20are)%20until%20they%20are%20tender.%3C/p%3E%3Cp%3EMix%20softened%20Capricho%20de%20Cabra,%203%20cheese%20blend%20and%20basil%20in%20a%20bowl.%3C/p%3E%3Cp%3EPlace%20grilled%20eggplant%20on%20a%20cutting%20board.%20%20Taking%20one%20piece%20at%20a%20time,%20put%20a%20slice%20of%20prosciutto%20on%20the%20eggplant%20and%20then%20spread%20the%20cheese%20mixture%20on%20it%20to%20cover%20it.%20%20Starting%20with%20the%20larger%20end%20of%20the%20eggplant,%20roll%20the%20eggplant%20into%20a%20roll%20up%20and%20place%20in%20a%20baking%20dish.%20%20Repeat%20with%20the%20remaining%20slices%20of%20egg%20plant.%20%20Spoon%20marinara%20sauce%20over%20the%20eggplant%20roll%20ups%20and%20then%20top%20with%20grated%20provolone%20cheese.%20%20Bake%20in%20the%20oven%20for%2020%20minutes.%20Enjoy!%3C/p%3E){kind=link}
